While in 'top', press 1 to see individual CPU usage. Then press W to
save that setting as default for that user. You can set up an /etc/toprc
if you want to set this as a sitewide default
Also, cat /proc/cpuinfo to see how many CPUs Linux detects.

(As an aside, a grammar question: is it "an /etc" or "a /etc"? That is,
do you treat the / as a consonant or a vowel, or ignore it completely? I
may need to dig up my MLA handbook.)
