I've edited ntp.conf and I'm able to reach the timeserver fine:

server xx.xx.xx.xx # IP address of server

driftfile /etc/ntp.drift # path for drift file
The daemon is running:
[spawn:~]# ps -ef | egrep ntp
root 1523 1 0 10:57 ? 00:00:00 /usr/sbin/ntpd
However, I think I'm definitely missing something, since the time isn't
in sync.
Extra info:
[spawn:~]# ntpq
ntpq> peers

jitter

Can anyone offer some insight?
