I hate to state what may also be obvious. A T21 runs at about 750mhz and a
Sparc Ultra 5 I belive runs at about 300mhz. While the RISC architecture
will give it a boost, it will not run as fast as a T21 for user space apps.
I have an Ultra 5 that is now collecting dust in my closet. I tried to use
it as a server, but it was just too slow. I replaced it with an Intel based
system with a Celeron 900 processor, which runs much faster. The speed was
probably compounded by the lack of memory on the Sparc (the memory to go from
128 to 256 cost more than the Celeron 900 system in total).

On the OpenOffice front I have no information.
