I just converted from a SuSE install to Gentoo on my Ultra-2.

I must say that it's much more polished, and has much better
support from the community.

There are a couple of options for the initial install, so that
you don't have to compile _everything_ if you don't want to.
Of course, if you do, you'll have complete control over the
system and the optimizations.

For your first time, you'll probably want the stage-3 install.
That'll get you up and running without a lot of compilation.
